Going fishing tomorrow out of Montegut in Kayak

I'm no where near an angler but have an idea of how to catch reds and specks. When's the best time to launch out? I had a friend saying they were biting crazy near sunset. What kind of lure or bait should I use?

Sunset probably because falling tide. I assume Montegut is similar to PAC with grass and open areas. All the standard lures work... spoons, spinners, jig head with plastic. Always bring a popping cork and try it. Everything eats shrimp so you can try live or fresh.
