You can cook them like pork ribs.

Seriously, I pull the membrane off the inside of the ribs. Put a rub of some sort on them and put them in the oven for 4-5 hours at 250 degrees basting them with beer every 30 minutes. The last 20 minutes I put some BBQ sauce on them.

***I only use the oven because my pit needs new burners***

I usually rub the down with tonys and lemon pepper. The sear them on both sides for about 5 or ten minutes on the pit after i sear them i take some heavy duty foil and wrap them up completely. After that set them back on the cool side of the grrill bone side down for about 3 hours

peel the membrane as mentioned before

parboil (30-120 sec immersion in boiling water)

pat dry and the add dry rub of choice

place of smoker with apple wood chips and set for low temp smoking (160 degrees) and smoke for 3-4 hours.

If you have a smoker grill, you put the coals/chips on one side, or in the side burner, and you don't put the meat on top of it...you put it on the opposite side. That way it doesn't cook fast at all. It 'smokes' slowly. That's why you do it for 3-4 hours.

ETA---if you don't have a smoker, just bring them to me.
