First post on this board: Sons and I got 5 Canada geese this weekend(with pic)

Live in northern Virginia now. We have gone goose hunting about 6 times over the past two years, and this 7th time we got 5 geese, none before. We breasted them and grilled a couple of the steaks and honestly, if you didn't know, I think you would think it was beef.

I know I'm probably on the wrong board to ask this, but have any of you ever slow cooked goose meat in some sort of stew?

Cube the breasts, cook a gravy. Tons of recipes on TD if you search.

ok, thanks. We did cube one breasts while we were out there and pan fried on a cast iron skillet. Salt, pepper, McCormacks hamberger seasoning, and garlic olive oil. Came out delicious.

You couldn't be more wrong

You have come to the right place. If your gonna do a stew I would use a plucked goose and cook it in the crock pot like anything else. Im sure you could cube the breasts and use to cook stew but dont overcook it. Breasts are good for plain steaks or cut them into cubes, wrap in bacon with cream cheese and jalapeno and enjoy

haha....you know I get jittery hanging around the board police of the Rant.

Makes sense that this would be the right board. Probably nothing but yuppies on the Food and Drink board.

Thanks....it was awesome and I was glad for them. I was worried they would lose interest if we never got anything. We've called some in pretty close before and took a few shots (and misses) but hadn't bagged any until this weekend. Although the setting for this hunt was completely different. We had previously been hunting on the Shenandoah River and this hunt was on private property with a huge pond.

first you make a roux....


then get creative, man. maybe do a light to medium roux and add beef stock and different veggies?

Or a goose jambalaya, that would be interesting. just find your favorite recipe and substitute chicken for goose.

What area did you go? My place is on the MD side of the Potomac in St. Mary's county

We can't start killing Geese until 10/1 I'm going to see if there are any teal around next week

Goose is pretty good, its mainly what I shoot now, out limits are a little more liberal, early goose is 10 per person, once reg duck season opens up its 5 each.

I gumbo a lot of birds. Smoked sausage and goose gumbo, I will cook juveniles on the grill (med rare) they are tasty, make stroganoff and chili with them as well. They are good smoked too.

Not as good as specks, mallards or sprigs but tasty.
Opening day 4 of us got 25, needed a 4 wheeler to haul em out. My 11 yr old lab had a good nap that afternoon

My friend has a farm out in Purcellville, VA. Yeah, we have a brief time in September to shoot geese, it closes up for a bit and then re-opens again in October.

Good kids, two are mine. Two friends. I've got 6 in total, 5 boys and 1 little princess....so this outing is nothing to handle. :)

I am at the other end of L Ont near Nia Falls, but I do hunt the St Lawrence R as well, its good for late season ducks when everything else is frozen. Lots of resident geese in S Ont, if we could only get them out of the city parks and golf courses ;)

Not going to lie, that looks weird as can be, shorts and all that greenery around you with geese on the ground. Congrats on the good hunt.

I was thinking the same thing.

I think I'll go home today and shoot a limit of canadas in our neighborhood pond while wearing gym shorts and a T-shirt

I'm just kidding OP. Keep taking the youngins hunting and teach them the right way to do things.
