Favorite way to cook backstrap?

I got one more left from last year. How do y'all prefer the ole strap?

Cooked rare or medium rare like a steak or wrapped in bacon with cream cheese and jalapeño.

I've never find a way I don't like it, unless it's cooked to hell. Recipe is secondary to a meat thermometer or being good at gauging done-ness.

I've had it chicken fried with white gravy and was pretty good. Never tried doing it myself though.

Chicken fried steak style. Or sliced fairly thin and cooked in a hot skillet with a little butter. Brown some onion and peppers after meat cooked. Don't over cook.

I took the tips and a spot that caught a bullet and ground it to make deer burgers. Mixed about it about 50/50 with some 85/15 ground beef. Sautéed some onions bell peppers and garlic and mixed that in then grilled them.

Was the best burger I think I've ever had. I'll definitely do that again.

I love it fried for breakfast, and I've had it steaked out, wrapped in bacon, stuffed with boudin, pepper jelly, cream cheese, jalapeños, garlic or anything else, but it's hard to beat a good burger.

Rub in olive oil salt and pepper seer all sides for about 45secs enjoy

not a popular opinion here, but my favorite is the way I grew up having it.

soaked in milk and mustard, rolled in seasoned Italian bread crumbs and then pan fried...food fit for a king if you eat it hot out of the skillet.

If you fry it, make sure you tenderize it first. It's awesome this way too!

I also like to marinate it in worcestershire and Italian dressing and grill it to medium rare

Wrapped in bacon with pepper jack and a Jalepeno is pretty good too, but it usually overcooks the strap because the bacon takes so long

I'm not a big fan of venison. I much prefer wild hog.

But if I'm doing venison, whether is hind quarter or backstrap, I put it in a crockpot.

marinate entire backstrap in Italian dressing overnight, grill on HOT grill to preference, remove from grill, let set up for a few minutes, slice to preferred thickness and enjoy thoroughly...

OR slice to preferred thickness after marinating overnight, grill and eat it right off the pit after a couple of double whiskies over ice...

Was thinking the same thing. Might as well throw it in the trash. I love wild pork too but damn baw

Ill butterfly it, soak in cajun power, garlic and whiskey. Stuff w link of boudin, cream cheese and wrap in bacon.

I have traded deer backstrap for wild pork tho. It just tastes better IMO. i will agree with you on that

I've recently become a huge fan of backstrap fajitas. I slice the strap thin and sear to medium rare off of the side of the vegetables and throw it on a tortilla shell with the cooked veggies and fajitas seasoning.

You can't go wrong with seering it whole however.
