Elk meat

I killed an elk and I'm going to make ground meat with some of it. I was told by several people to mix at about 15% with beef fat. Where do I get beef fat from? And does this sound about right?
What else should I make with the meat?

Elk is very very lean, I would cut it with ground meat and call it a day.

When we grind whitetail meat we do it about 70/30 deer meat to beef fat or bacon rinds

Sounds like that could be correct, if you use straight beef fat. I mix my ground deer 95% deer/5% beef fat.

That aint dry boot? Always mixed mine 60/40. Dont know if deer is much diff from elk tho

Not at all, pretty much perfect IMO. Sometimes I don't even have to drain it after cooking it. Like I said, ya gotta use straight beef fat, not just trimmings.

Huge difference between using actual fat and another fatty meat. Most people get the percentages mixed up. You want the final mix to be about 5% fat. So either use pure fat at that ratio, estimate how much is in the pork you're using, or buy ground beef with a noted fat % and do the math.

I see. I mainly mix my deer and pork ratio 60/40. Using pork boston butts tho. Sorry OP, didnt mean to high jack

My dad buys pork fat from the butcher at Brookshires for $1/lb.
Might just stick your head in a few grocery stores and see if they can help you

why would you waste that great lean meat and ruin it with 20-30% fat?
id do 5% fat max, but lean Elk meat is terrific as is. eat healthy man!

More info on the dead elk!!!!! Where'd you shot that bad boy?! An elk is on my bucket lie for sure. The meat for me is second to none.
