Eating diver ducks

Any of you guys have secrets or tricks to make diver ducks eat worth a damn? I've used the whole soak in milk or vinegar and water mix, is that about the extent of it?

I brine them to pull the blood out and smoke them with bacon. There was thread with some good methods earlier that work well with scaup and other divers

Italian dressing marinade overnight then smoke with applewood for 45-60 min at 200

breast out and slice breasts thin strips then pan sear in butter with some montreal steak seasoning.

use in gumbo after soaking blood out

We don't normally shoot them, but considering that the puddle duck population is virtually nonexistent in SELA, we decided to rip shots at a couple.

Soak them in ice water for a few days change the water out 2-3 times a day... I did it for a little less than a week, let them dry off real good, olive oil, season it up like you would a steak and throw it on the grill

No finer eating duck than a canvasback. A diver.

Where are u hunting with no puddle ducks?


Pot roast them. Standard duck recipe brown Ducks still on bone then sautéed the trinity with some garlic. Add chicken broth cook til meat falls off bone can't beat it no matter what kind of duck.

Not all divers created equal

Red heads and canvasbacks very different than ring necks. And ring necks very different than dos Gris


Canvasback a diver drew the highest pay for market hunters.....

Scaup stomp in mud, ringnecks, redheads aren't bad, cans are strict vegans, they are good. Actually brought more money in market hunting days than the democrat duck.

Capt I still have somewhere around me house and old bill of sale from my great grand paw at a grocery selling cans way more than anything else

Old timers call cans kings. Because they were the king of the market in market hunting days. There is quite a bit of info from the French market on selling ducks. Pintail were up there too but cans were the king. Hope to be eating them for dinner tomorrow!
