Eating chicken embryo

So a guy who works for me raises and sells chickens and eggs. A few months ago he started getting requests from some of his Asian customers for chicken eggs that had a devoloping embryo inside. Now he cannot get enough of them they are selling like crazy. They call them Balut eggs. Anyone ever heard of this?

Yes. It was on some series a while back where they ate bad shite. Don't remember the name of series.

I've seen it a handful of times on Anthony Bourdain's show.
Asians have a odd palate man...

ETA: Work with an Chinese professor, even he admits that Asians eat some nasty shite.

Super common in the Philippines. I couldn't eat it. One of the handful of things I won't eat actually.

Bunch of folks in here turning up their nose at some balut, but will eat the hell out of what other people wouldn't touch. Eating some muddy as crawfish and what not.

Get some Vietnamese coriander and Salt & Pepper and you're good to go. I prefer duck balut where the embryo has developed some feathers but not too much.

If your buddy can't keep enough balut for his "customers", he must be selling it dirt cheap; I believe it goes for about $0.75/egg at an Asian market.

Always open the balut from the rounder end, discard the egg white b/c it's tough and rubbery.


The picture you posted is an uncooked egg, here's one that is cooked.

I can eat just about anything, but the texture of the bones are too much for me.

Durian though, I can eat the he'll out of some durian.

I prefer Crystals or Louisiana over Tabasco. But I couldn't imagine a vinegary tasting balut. I'll stick with S&P on my developing bird embryo.
