I watched some Mexicans butcher a goat at 8 am then let it hang in the south texas sun til 3pm with thousands of flies on it, they then threw it on the pit and it was the best goat I've ever had.

Yep. I worked with a fella from south Texas who would bring a goat or two back to LA every time he came back from vacation. A smoked goat hind-quarter is hard to beat.

Well I'm not a fan of lamb so I'm sure I'll feel the same about goat. I think its due to the fact that I helped my uncle clean one once. One of the nastiest things I've ever smelled.

Yes, if cleaned and the proper cooking temperature is achieved. Many foods we eat have harmful bacteria, somennella, etc before it is cooked.

Cured first in salt. Then basically just dried, but that process is the same as cooking it.
