If you grill it, i like to leave the skin on one side and sear the meat side, this keeps it flakey and juicey.

I can see ranch powder, but the dressing just doesn't seem right to me

That came out great. The cashew-garlic sounds like something I would like!

Going to try a redfish meuniere recipe tonight.

Its fresh redfish. Don't mess with it too much. A little butter, lemon and grill for around 6 minutes a side.
