Boiling crab

Get the water to a rolling boil put the crabs in and boil for?

I've always added at rolling boil for 5 minutes or so, but it's been forever since I've boiled crabs.

I thought it was return to boil then turn off heat and let soak.

I turn the fire off when somebody hollers at me that it's boiling again. Usually a minute or two I guess.

12 min, put the corn in, then soak for 20. Also, I like to throw some ice in for the 20 soak.

Bring back to boil for a couple minutes, kill fire, open lid and soak until they all sink. They still running good?

Put them in a roiling boil. Then 5-6 minutes after the water comes back to a boil. Kill the flame. Soak for 25 minutes or so.

I was actually being serious. Had a friend who owned a seafood place and he said that's what health board would check for. I believe it was for ecoli.

Make sure you put the crabs in really cold or they will drop there legs and claws.
ETA; I have a buddy that pops a hole in the top shell to "get the seasoning in them". They were seasoned a little better than normal but IDK if it was from having more seasoning or from the hole trick.

As long as you follow boil for 5 minutes, let soak for 30-40 depending on fullness they will be fine and get seasoned perfectly. Just like crawfish, do a quick sample before taking out. I generally just pull a claw to test this. Another secret I have is that I over season the water a little bit.

Most are doing it wrong. Either put them in before you get the water to a boil or chill them before putting them in a rolling boil. That way you don't lose the claws. I soak them till they start to sink. Also they stay juicy if you lay them on their backs if you don't eat them right away.

Thats what I do, crabs are swimming in seasoned water while its gettin hot, boil for about 12 mins. then soak.

I used to do it the wrong way watching my old man. Notice most restaurants boil crabs with both claws on?? It's because they get them cold so they aren't shocked when they hit the hot water.

Icing prior is definitely the way to go.......and good point about laying them on their backs, I do that as well.
