I'm getting a German shorthair pointer. He was born today so should get him in 8 weeks

Dalmatians are mentally unstable as a rule. Golden is the best dog there is but they shed like crazy. Not a fan of the breed but I know it to be true.. A standard Poodle (while ugly as hell) is very smart and won't shed.

Late suggestion.
My girlfriend has a retired greyhound. To preface, when a greyhound is retired it doesn't necessarily mean they are old or worn out. Some of them despite their breeding and pedigree aren't competitive. Some found uncompetitive or not as gifted are "retired" after a year or less. They need homes and a family. And aren't as nearly as expensive to obtain as other pure bred dogs.
Greyhounds aren't typical dog dogs but are gentle giants who are loyal, sweet, obedient, incredibly smart, and loyal. They typically aren't interested in other animals. Don't bark, whine, or chew up furniture. They are only comfortable around what they consider "their pack" of humans. But when they warm up and gain some personality they are wonderful animals. Incredibly athletic, beyond belief. And will never leave your side

If you can give a Border Collie the necessary love, attention, and activity, they are hands down the best dogs to have. My fur brother is the best companion I've ever had. He's hopped trains with me, followed me through the wilderness, slept beside me on the streets, and I have rewarded his faithfulness with a landscape he can explore and romp around in to his heart's desire.

When I was a little boy, after watching 101 Dalmatians, I begged my parents to get a 'fire dog'.
Knowing the reputation Dalmatians had, and my old man's fondness for big dogs, they purchased a harlequin Great Dane. The Gentle Giants. Apparently I figured out quickly 'that ain't no fire dog'.
Talk about one mean motherfricker. He was kind to the immediate family, but if a sombitch came near the fence, 170 lbs of holy-goddamn-shite would try to leap over and destroy them. Most territorial dog I've ever seen, and far scarier at that size.
One day, a friend of my middle brother came over. I remember he was a dumbass Yankee transplant. Depsite my brother's protests, he proclaimed his intent to go pet the big fella. I recall my brother pleading with the kid not to go out back (my folks were at some party at the golf course).
As soon as the kid goes out there, Zeus bit him. By bit him, I mean he bit the chucklefrick's palm off. Not, oh, it's a deep wound. I mean there was a goddamn HOLE in the kid's hand where his palm used to be. He ran inside, screaming and crying (reasonably so), and my brother kept slapping him to keep him from passing out. I recall them turning the sink on and seeing the stream of water pass clear through his hand. Ambulance arrived shortly after to take him to the hospital.
Needless to say, we put Zeus down. The family didn't sue, though, because their son was obviously a dumbass.

Our next dog will be the Labradoodle. Our good friends have one and it is the most playful friendly dog I have seen, and soft with little to no shedding. Great family dog.
This looks exactly like theirs. Full of personality and I could pet that dog for hours. Badass dog.

I owned a Dalmatian and I can honestly say mine was weird. He was a good dog but was often "off" and aloof. I later learned they were hit and miss based on the breeding. A good dog is a good dog regardless of breed but I wouldn't be taking chances with a Dalmatian and kids.

Vizslas are awesome. I have one, my buddy has one, and my parents have three. None of us have had to interview to have them. A vizsla puppy will cost you a grand though. Their personalities are awesome. They want to be with you all the time. I don't have kids, so I can't say from personal experience how they are with kids.
I grew up with boxers in the house, though. As others have said, they are awesome with kids. The two boxers I grew up with a kid were the best dogs ever. One used to chase me in my go-cart and would bite the front tire and pick the front end of the go-cart up so it wouldn't move. Man it was funny. Boxers are awesome.

Most weimaraners I have known were amazingly skidish but I've never owned one.
I think (not certain) that Dalmatians are inclined to health issues...would explain why they are not more popular than they are.
I am trashy so I love pits (but at least I live alone, don't have kids, and have plenty of land so I have room for her).
Labs are always a can't miss dog but it sounds like u may be looking for something less common.
Consider a blue heeled (sp?) ...truly fantastic pooches. About the size of the breeds u mentioned, very distinct personalities, super intelligent as far as dogs go, and loyal like u can't believe.
