He was resisting then pulled out a box cutter and stabbed a guy. Thats attempted murder and self-defense. How are the security guys going to jail?

Really? They have no legal right to detain him. And then proceed to beat the shite out of him. And then when he tried to fight back continue to assault him. And then when he was clearly incapacitated continued to violently assault him.

No shite huh.... I was at the Denham Walmart waiting on wife. I see a crap load of DSPD whip through parking lot and chase a guy into the space right in front of me and tased his arse and he fell face first like that minus the 250lb sack of fat of course.. I kept thinking to myself damn that hurt

Nope. The gratuitous face punches once they have him on the ground are obviously battery. When those security guys decided to play police and attempt an arrest, they assumed the same responsibilities as a cop. If that was a police officer punching a guy like that, the OT would have exploded.
No question that the choking, body slam and face punches after he is down are problematic for the security guys.
As a private citizen, you can use force to protect yourself or another. They weren't doing that in the beginning, then when he submits and they keep it up, that is a battery.
