I just did a back patio addition and the new slab is 30'x27'. I am going to just do a basic "cola" stain with no cuts. Some of the quotes I have gotten are in the $3k range. This seems like a pretty simple DIY project where I can save some money (already blew up the budget on the patio). Is it as simple as some of the youtube videos show?

Very simple. Visit a few supply places around town and they will give you everything you need.

I know, how can they charge some of these prices and get away with it? I can understand if they do an overlay for design purposes, but 3k just to do a simple stain and seal on new slab?

You should consider the cuts. Very inexpensive and makes the area look much nicer.
