My friend separated from his wife today and he, another friend and myself were group texting. We were keeping it light-hearted and jovial to try and loosen him up. Throwing out different girls he could start talking to and all of that, next thing we know she pops into the conversation under his name. She was on her iPad watching our entire conversation and comes in blowing up. Could she use anything we said against him?

She just repeated some of the stuff we said. Now she just wrote that I should fear or my safety, lol. Could I turn this over to the authorities?

I'm assuming you're talking about it being used against him in the divorce hearings, correct?
If so, look at it from the other side too. Has SHE said anything angry/crazy/psycho enough in response that could be used against HER in the hearings? He could argue that he was just joking around with his friends, and that clearly it was just his friends trying to cheer him up. If she came in acting like a crazy, jealous, psycho bitch and started threatening people he could easily use it to show how unstable she really is, aka one of the reasons for divorce.

She could use it bc they aren't legally separated. Take screenshots and get some good explanations. She'd have been smarter not to respond that way. So there's that. At least you know what she thinks she knows.
