OT fitness crew- meal prep

Working as an accountant, with tax season starting, I'm going to be very busy and too tired/lazy when I get home of a night to cook and make meals daily.

I've never done meal prep for the entire week. I usually cook meals here and there and eat the leftovers till they are gone.

Anyone who has experience with this have any ideas/recipes? My thinking is to make lunches/dinners on Sunday to last Monday-Saturday. Each meal will have 8 oz. of protein, side of veggies, and sweet potato or brown rice for carbs. I'm worried that it'll turn into chicken every meal and I'll get sick of it. What other proteins can you meal prep? I think fish or seafood wouldn't workout for prep purposes, and it would likely not be the best idea to eat red meat 6 times a week, right? (I've seen many conflicting thoughts on how many times you can eat red meat before it's too much)

cook sunday and plan for meals through wednesday.

cook wednesday and plan meals through saturday.

cook a nice meal on sunday so you dont go insane.

cooking every 3 days lets you cook fish or chicken or variety and not have to worry about it going bad.

You have to dedicate a few hours to you sunday but its worth it in the long run, esp once you have a routine down.

I had a nice one down when I was tdy but I went home on the weekends. Don't do it that much now b/c my house is 5mins from work and i just eat the leftovers from the night before.

I would have chicken breast flavored a few ways. Steaks and bunless burgers.

Nothing wrong with red meat every day. Find and easy to prepare meal and eat it a lot. If you are eating for a goal, don't worry that much about making great tasting food. There is absolutely nothing wrong with eating a similar meal all the time.

A good lunch meal:
Stew meat beef tips
Can of beans/vegetables

Warm up a skillet on medium and throw some butter on it. Throw the meat on the skillet, walk away and do whatever you need to do, come back in 5 minutes and flip em. Come back in 5 minutes and you have your protein. Open the can of beans/veggies and pour them into a glass container, then throw the meat on top of it.

I baked 4 huge chicken breasts (they can almost be cut in half for 1 meal), cooked fresh asparagus, fresh broccoli, and fresh green beans & mushrooms (the juices from this is killer on chicken). I also bought frozen tilapia filets (made sure they didn't have carbon monoxide in the ingredients). I also cut up a cucumber to go in a romaine lettuce salad each night.

My plan is to eat chicken MWF, and fish TTh. Hopefully this will mix it up.

I'm a tax accountant too...had the same exact situation last year.

I cook meals for the week on Sunday. Usually spaghetti, tacos, stir fry, pork loin with frozen veggie sides...anything that can be made in bulk really. Lunches are always salads, either buy precooked chicken from Trader Joes or bake it on Sunday...used to make croutons from leftover bread too. Just buy prepackaged spinach and bring everything to work - very easy and healthy.

My normal schedule went something like:
- Wake up at 430-445, cook breakfast tend to my dogs.
- At the office for 6 am
- Work through lunch until 6 or whenever (sometimes earlier, sometimes later)
- Go home and tend to the dogs, be at the gym for 7/730
- Shower, eat, in bed for 10 pm

Tough for the first week, but after that I was like a machine lol. Tax season is great bc my life is so structured and scheduled...stay really focused all the time.

ETA: if you have a Trader Joe's near you, their premade stuff is clutch...made with good ingredients and little to no prep.

Also, for a good healthy and quick carb - Near East brand's Quinoa w/ Brown rice is great.

You can cook a boston butt all day on Sunday and have pulled pork tacos with fresh pico all week. You can cook quinoa or a big pot of a simple side dish so that way when you get home at night all you would have to do is grill a steak or bake some chicken thighs. One pot meals like chili or shepherds pie go a long way.

Where is the fat in all of this? You need alot of fat and chicken breast with vegetables has almost zero grams.
