I don't think you're in the wrong. If you have personal objection to illegals doing work then you may want to do more research into who you are hiring. Other than being illegal though, you're assuming these guys aren't going to give you a good job. I get the language barrier issue though.

I honestly don't see the problem. Just let them do their job. You think English speaking people can dig up your yard better than Spanish speaking people? I don't see the correlation between the two.
You're in Austin? What did you expect?
Even the "legitimate" crews are full of laborers that don't speak English. I just assume it to be the case. As long as the foreman speaks English and CLEARLY understands my instructions, then I'm fine with it. I have no problem with you telling them to wait for thier boss, so ya'll are clear on exactly what needs to be done.
But if you're waiting for a crew of white laborers to show up, in Texas, you're going to be waiting a while.
And if they do, they will probably be less skilled than the ones you just kicked off your property.
