Favorite Vacation you've taken for $3,000 or less UPDATED OP

Looking for ideas/stories about the OT's favorite vacation spots.
Details:
It will be me and my wife
We are in our mid 20s
Will probably be headed to Mexico or the Caribbean
Wife wants a beach/tropical vacation this go around but I would still like to hear other ideas
We are in pretty good shape and will enjoy some outdoor activities but my wife is very girly-girl so true camping/backpacking trips are out of the question for us
We love to drink but are not huge party goer club type people. Something more laid back would be preferable.
If you have stayed somewhere off the beaten path (ie not a big all inclusive resort), I'd love to hear about it.

Costa Rica can be cheaper than that and still really nice.
Gotta get flights early and get a hotel deal, but you could do it.

Xcalak Mexico, fly to Cancun, rent a car and drive 5 hours south. Stay at a 6 room bed and breakfast at Sin Duda Villas for less than $150 a night, 20 yards from the water. Relax on the second largest coral reef in the world. 15 minutes from a town of 400...

Everything about this sounds nice except for that 5 hour drive. That would be brutal. Is this area safe?

Just got back from Lake Tahoe. Wife and I went for 3 nights. It was outstanding. It was a great time to go being the last weekend of the ski season and room rates were really low. We stayed at the Landing resort and spa.

I am pricing Moscow and St. Petersburg right now and surprisingly you can get round trip/hotel to one of the cities and airfare for $1,500 for one person 8 nights, so I think two people would be doable for $3K.

My old man and I went to the PGA golf school in Jupiter Florida for 5 days. They had private lessons and a round each day included and it's a really nice area. One of my favorite trips ever and was fairly inexpensive
