Chicken, fish, lean sirloin. Lots of greens. A few varieties of dry beans. Brown rice. Peppers, onions, garden vegetables. Low sodium stocks. Fruit. Low-fat plain yogurt to take the place of cream and mayo. Eggs. Whole wheat pita bread.
My professional cooking background is mediterranean so that's the style I'm familiar with, but I'm researching some other preparation methods and recipes to replicate traditional southern dishes.
