Best type of "off the books" job

A friend is visiting our fine country on a tourist visa. Persons with such a visa can't be employed, but my friend would like to make some spending cash and get to know people while here. Any ideas? Can restaurants hire such people?

Speaking of books. Teach him or her how to take bets and run a book themselves.

About as off the books as you can get.

Only a local place.

I've been 'off the books' as a farm worker and a doorman/barback at a bar/club. Invariably, any place that can do that kind of business will be operating at one location.
