Probably one of the little Island Bungalows I stayed in off the shore of Thailand.
Why was it the best hotel? Cheap. Exotic. Awesome.

Latitude 62 Motel in Talkeetna, AK. No TV, bathroom down the hall. But it was the first roof I had slept under in a month.

Location. Honestly you could have put a shack here and it would have still been awesome.

Grand Park Hyatt Tokyo was probably the best. View of Mt Fuji....Japanese breakfast every morning....killer spa.
Close second was the Adolphus in Dallas. But only because we got the penthouse suite.

Lee Gardens Hotel, Hong Kong
First class hotel (probably a 4 star -- not quite a 5), but had great service, several restaurants, and shops from Rolex to Adidas to Gucci to Ralph Lauren. A resort hotel that didn't want to be one purposely.
Second place goes to
Waldorf-Astoria/Casa Marina in Key West.
Private beach, excellent bar, pool, first class rooms with a view, and outstanding customer service.
Honorable Mention goes to RuthinCastle in North Wales.
Everything you would expect a 13th century castle to be.
