any florida licensed residential contractors on here?

Took 5" of water in my beach house in Pensacola in April during the flood. We have the check from the claim. I have a few questions and could really use a knowledgable person's input.
FYI: replacing 2000sq ft of carpet with tile. I have already cleaned the damage out 3 days after it happened.

Looking over the paperwork. If we do the work ourselves, we have to repay the 10% "profit" to the Insurance company. I am guessing the "Overhead" also. Which is another 10%. There are specific items that are considered part of the insurance claim like HVAC because they require a specific type of trade that are exclusions from the O&P. Does this mean everything else except the "O&P" can be used by me to either buy the needed materials or pay a sub to complete a specific portion? And at the end we would just reimburse the Insurance company the money that was designated as "O&P"?
