Here's what I recommend.
1. email his teachers so they can watch for signs of trouble brewing. They will most likely report it to the admin as well
2. Your son has every right to defend himself but understand the boy will be suspended for fighting per school policy. Don't burn down the school, they have to protect themselves from liability. Many times the stories admins receive are not clear cut as to who is at fault.
3. Teach your kid how to avoid certain situations like hanging out in areas that make it easy to be jumped out of sight
4. many schools have a "bully watch list" that alerts all faculty to kids who have been bullied routinely. It communicates these facts to all staff not just the ones who teach your son.
5. Don't ever go to the school yelling and screaming. allow the school to do their job and hold them accountable when they have not. You'll earn a bad rep and find it difficult to work with admins later.
6. kids are cowards and will go after the easiest target. Teach your kid how to prove he isn't one.

Contacting the principal is a good idea. This way if your son drops one of those guys next week the principal is aware of what happened previously.
The school may not believe your story next week if you tell them after the next incident where your kid comes out on top.

He passed away a few years ago. Cancer got him. I don't know if he was ashamed of me or not. He probably was.

If he is already super athletic you should enroll him in some jujitsu classes.
It will teach him balance and help coordination.

Sounds like good advice. Long gone are the days where you can just teach your kid to pop a bully in the face and expect everything to just work itself out.

Or just cut a check and send the kid to private school.
I worked at 1 private school and 2 public schools before changing careers.
Broke up more fights at the private school than I did at the publics. Hell, one fight was a vicious fight between two lesbians fighting over another chick.

I bet he is in heaven, but still ashamed

Did your boy do something to instigate the fight?
Kids arent always honest.

Tell him to walk up and punch one kid straight in the nose (and make him bleed), and then tell him "frick you" right after. Do the same to another kid the next day. They'll get the hint.
My bread and butter when I was younger was beating up bullies. Most of them can't fight for shite, and that's why they attack easy targets

First thing I would do is contact the school teacher and the principal right away to make sure this doesn't happen again
How exactly would they do that? Follow him around at all times?
Kids are gonna be kids. Bullies are gonna be bullies.

Knowing most bullies, his kid was probably smarter and more popular than they were.
Bullies are insecure pussies under the surface.

To determine how a recess yard of 7yr olds is unsupervised enough for this to happen.
You said they dragged him behind a shed.
Kids will find a way to do mean shite whether it's in the yard, the halls, the bathroom, whatever. They'll find a time the teachers aren't looking.
