Cartman Gets an Anal Probe - the 1st real episode (I don't count the Christmas thing that started it as episode 1) really let's you know what the show is truly about.

I really like "The Mexican Staring Frog of Southern Sri Lanka" and "Prehistoric Ice Man". Also, "Cartman joins NAMBLA". Most of the early stuff is solid, but there are definitely some misses. Also, "Casa Bonita". But I think the winner might be...

See, as much as Tenorman is the quintessential South Park episode, it's almost too dark for a first watch.
I'd go with Something Wal-Mart this way comes. Everyone can relate to it.
