What caused the rebellion in Star Wars?

The original trilogy really focuses on the rebellion trying to take down the empire, but they never really come out and say why.
Sure, they used the Death Star to blow up Alderan, but they did this to send a message to the rebels. Why was there a rebellion in the first place?
In the prequels we see that Pallpatine uses the threat of a corrupt trade federation to consolidate power in the senate. He then orcastrates a coup, and expunges the Jedi council.
After that I feel like I am left wondering why life is so bad under the new empire? Is it really as simple as trying to return the galaxy to democracy?
Was there more in the EU that expanded upon this? I guess I'll have to watch the new rebels cartoon.

There was a republic, hence all the senators. Then Senator Palpatine clandestinely sowed discord through the galaxy and seized power for himself. The rebellion was the group that opposed his tyranical rule.

They wanted Palpatine out, the rebellion started in spirit as soon as Palpatine declared himself Emperor.
I haven't watched/read any of the EU stuff, but I remember the novel for ANH stating that once he became Emperor he basically allowed his advisers to run things.

They were really discriminatory against non-humans. Like most dictatorships if you were in the majority and kept your head down life was pretty ok. But if you were someone they didn't like; alien, Jedi, political dissident, etc. then you were in some shite

The Empire had a racist governmental element like Nazi Germany.
I know the Wookies (for example) were enslaved under the Empire.

Interesting. I can't help but watch the OT and think that there really isn't much reason to truly despise the empire. They tell you they are evil, but they never talk about why.
Perhaps the destruction of a planet should have been enough to drive that home. However, going back and watching the films it seems more like an effort to crush the rebellion at all costs.

I think that's probably why the OT is universally liked. There was no politics in it.
The prequels were nothing but political maneuvering and that makes for a pretty boring adventure movie.

They didn't want an Emperor and wanted to resume having a republic. Also, many of the empire's policies were very antagonistic. For example, they banned non-humans (with like one important exception) from serving in the Imperial forces, government positions, and being elected to the Senate. Non-human species were also given fewer rights and humans were given preferential treatment. That's why the few non-humans you see in the original trilogy of Star Wars that are wealthy, powerful, or hold a position of responsibility are all involved in illegal activity (smuggling, gambling, ect) or are a part of the rebellion (Admiral Akbar).
