A lot of good recommendations so far, but it seems like you've seen them.
Firefly
Freaks and Geeks
Terriers
are all great one season shows.
"Catastrophe" on Amazon is fantastic and can be finished in like 5 hours.
Ditto "You're the Worst", though I don't know where it would be available.
And if you have HBOGO access, "The Larry Sanders Show" and "Mr. Show" are both fantastic, recent additions.

The first season of Hannibal was a surprise for me. I ended up watching it all in just a few nights.
But the second season was a big drop off and the third season almost wasn't worth watching.
