How was the T-1000 sent back to kill John Conner?

Reese tells Sarah in Terminator that "Their Grid was smashed, we had won".
If that's true, after the 101 was destroyed, the future was set, Skynet was destroyed. How do they send a more advanced Terminator back to kill John Conner 11 years later? I'm not gonna even get into the absurdity of the T-X.
I feel like I'm missing something and it's really bothering me.

Seems like you're missing the fact that this was a movie script and whoever wrote it wasn't expecting someone to analyze the shite out of it. Enjoy it for what it is.

Not only that but how could it go back in time if it doesn't have living tissue?
As for your other question you could say they had another time displacement unit somewhere else and the instillation was operational independent of the Skynet main frame.

Well excuse me for expecting more from James Cameron.

I don't think you should blame James Cameron for the piece of debris in the water. The script merely says that the board tips over when both of them try to get on due to their combined weight. If anything...you should blame the production designer who had the piece of debris built for the scene. It's difficult to blame him for it, however, seeing as he won an Oscar for his work on the film:

Yeah probably but it's still fun to pick on.
And T2 is a fantastic movie. It was the first R rated movie I saw in theaters. Vivid memories of going to see it and not knowing what to expect.

One of the movies had a quote along the lines of, "We never could stop Judgment Day, we only delayed it." All the movies had actions that changed the future, but the future is still inevitable. The machines always killed most of humanity. Had Sarah Conner been killed in the first movie or John in T2, someone else would have led the resistance.

Listen, and understand! That Terminator is out there! It can't be bargained with. It can't be reasoned with. It doesn't feel pity, or remorse, or fear. And it absolutely will not stop... ever, until you are dead!
But then they have time to frick?
They are running for their lives since the nightclub; but they have time for rumpy-pumpy in the Tiki Motel?
It's still there by the way: Room #9, where the magic happened:

The fricking is more of a spur of the moment type deal. They don't know that The Terminator killed Sarah's mother and discovered their location, Reese pours his heart out, Sarah is stressed out, sects happens.

That scene is actually why I think Cameron came off like a massive jackass the other day when he dissed Wonder Woman as a step back for women so he could pump Sarah Conner as the more progressive and respectable hero for women.
Dude is all "She's a male sex fantasy! Look at what I made, Conner is gritty and flawed! She's the real MVP!" Meanwhile all I could think is how he is blatantly ignoring he needlessly had Hamilton take off her top and Sarah Conner always has to be saved by a man.
