Gilligan is using this philosophy with a prequel series that has characters with firmly established endings while GRRM refuses to deviate from an ending that he can't set up

That might not connect with GRRM's issue.
I think his biggest problem is that he's lazy. Writers write, and I know some hate to hear this, but if GRRM was doing his job as a writer, he would have finished the series a long time ago.
But I know, I know who am I to tell a creative artist when they should be creating yada yada.

GRRM set up a world a bit more complex than Vince Gilligan

I think part of the reason he doesn't write is he can't get all the pieces in the series to fit into this endgame he says he's had since the beginning.

I agree with Vince Gilligan. I don't really agree that GRRM has that problem. He has spoken at length in his blog about letting the story flow naturally and grow in the telling.
But, it is definitely a problem when writers force something in at the end whenever the story should have outgrown it. "How I Met Your Mother", I'm looking at you...

I can't imagine what it's like to be a fan of the books. I remember when Rowling took that long break between Goblet of Fire and Order of the Phoenix. I thought I was going to die from anticipation in those final months before the release of the fifth book. And that was a wait of three years. And her excuses for the delay were valid (got married and had a baby).
The only excuse I can think of for this wait that is now five years long is he no longer needs the money.

GRRM will die before the books are completed and D&D will finish it via the show. The sooner you accept this, the better.

I think it's that, and that now he's trying to find a little different way to get everything to the end. Doesn't want the show to completely spoil the books.
