Why has Monroe never mentioned the Captain being in his shop for a spell or potion?

Because Monroe didn't know the Captain or that Nick knew him until the end of the last show.

But what happens to Adelind?

I have no idea. They have a lot of options with her. They could end her, or keep her as a long term recurring pain in the arse bad guy.

And then there's that situation with Juliette and the captain?
As I believe Psych said, that can be resolved through Monroe and/or his girlfriend because it's due to a spell. It wouldn't bother me if we lost Juliette in the process and Nick would get a new love interest.

If Adelind fails why would she be kept around? The Prince would have no use for someone who couldn't complete their task, and for the show's purpose she isn't even a Witch anymore.

Adelind is familiar with potions and spells, is a familiar character who knows all the players, and if audiences respond well to her, they can find a way to keep her around on a recurring basis. I'm not saying this will happen at all; just that it can.

But that shouldn't matter. The captain came to the store and made it clear that he was subject to an obsession spell of some kind and needed a potion. Monroe has had to work on it a couple times, so he should remember. When he found out Juliette was the woman, he should have started with the disclaimer that an obsession spell is involved. The identity of the Captain is irrelevant.

You start out asking why Monroe hasn't mentioned the Captain to Nick. Answer: he didn't know he was the captain. Now you ask because Juliette was involved. Answer: For all practical purposes, he didn't know until the last show and went to Nick right away. Why do you want him to act on shite he doesn't know?

Why doesn't Nick bring his trailer to Monroe's house and leave it in his garage or something? He seems to always be there anyway.

And I agree with Monroe telling Nick that they are under a spell. Why wasn't that mentioned? Once he saw that it was Juliette, that should have been the first thing out of his mouth, as a precursor to, by the way, your girl is hooking up with a guy.

I think it's a minor thing that will work itself out. They pretty much already know she had/has cat scratch fever.

Ok. Let me break it down for you. Guy comes in and they realize together he's under an obsession spell. It will only get worse. Monroe sees same guy with Juliette in the store. It is at this point that Monroe should have mentioned the spell! Then, we'd have established the fact that Juliette and this Vessen (or whatever else gets involved in spells and potions) are involved. Once the Captain's identity is established afterwards, then both Monroe and Nick would know he has ties to their universe. The show seems to have ignored this in favor of protecting the suspense of the Captain's hidden agenda.

We still don't fully know what the Captain is do we?

And there is still a lot of uncertainty about what exactly the Royal Family is and there role in society?

And this mysterious key?

Maybe y'all can elaborate on those.

The other thing is - The whole reason that the Captain is having this problem is because he saved Juliette's life. He's kinda suffering from a whole mess of unintended consequences from doing the right thing (although it was for wrong/self-serving reasons in order to have the Grimm where he wants him).

When the whole thing comes out - this will help Nick forgive him/enter the "uneasy truce" somebody mentioned earlier.

I tried to get interested in this show, but just couldn't. I expected that he'd be hunting characters from Grimm's fairy tales like evil queens with poisoned apples, child-eating witches, fairies, etc. Instead it's a bunch of weird monsters with lame German names.

The monsters are the origins of the fairy tales. It's a more real world darker take on the fairy tales.
