Brazil - Some brilliant imagery by Gilliam in this one; great dark humor, and theme of the individual vs. the massive bureaucratic state is much more accurate and far less romantic than has been done in most movies.
Holy Grail was the favorite for a long time but Brazil finally supplanted it.
Princess Bride is a very close #3.
