Echoing the theme above of game I've actually watched (not just heard about later or saw highlights of that night), it'd probably be the 99/00 Outback Bowl UGA vs Purdue.
We were down 25-0 against a drew brees led purdue in the 2nd quarter and ended up winning 28-25 in overtime. It was at the time the largest bowl comeback in history and stood for a few years before I think a marshall/ecu (or something similar) game broke it.

2001 GMAC Bowl
Marshall came down from 38-8 at halftime to beat East Carolina. Byron Leftwich was the QB. Final score was 64-61 (had to look that part up). It was insane.

FSU coming back to tie Florida in 1994. They trailed 31-3 in the 4th quarter.

I was too young for the classic Bills-Oilers game but I did watch the Colts-Chiefs game a few years ago when the Colts were down 38-10 and won.

I watched the entire T-Mac comeback against the Spurs as I just happened to stumble upon it while flipping through channels. That was pretty amazing to see, but would have been better in person.

I remember Maryland coming back to beat duke when they were down 11 or 12 with 50 seconds left. That was like 15 years ago

Blues-Maple leafs Blues were down 5 goals in 3rd period with 15 minutes to go in the game and won it in the first minute of OT. 6-5 Cujo was in net for Leafs.
