Does anyone know how far back mortgage company will go back and look at filed taxes?TIA

We had current year (which we had not filed yet, so they asked for our W-2s) and two years of returns before that.

Ok, I'm just not understanding, because our lender asked for our last 2 years of returns, but also wanted us to sign a tax release form, I don't know what that's all about

Lender may request forms from IRS and compare to what you gave them.

This. If the lender has reason to believe the copies you gave them might not be accurate, they can then check with the IRS to see what was actually filed.
They are not actually going to get a full copy of the return, though, that would take forever. Instead, they will simply ask for a transcript, which just picks up the key totals from your filed return.
