Meeting with a senior exec of a company I want to work at after college for dinner tonight. Was put in contact with him to learn about the field I am preparing to enter in.

assuming you are 21, drink as little as possible without seeming wierd.

Dont ask the "what do you/your company do" questions... ask the "what do i do to work for you/your company" questions. Ask how he got there. Make it seem as if you want to work for him even if he owned a sweat shop making soccer balls.
Dont have "what he is having" when ordering. Know what you like and I would only have a glass of wine at dinner and a desert drink.
