Chase Freedom vs Chase Sapphire - which should i use more

I have 2 Chase Freedom cards and just got a Chase Sapphire card.
Should I continue to use my Freedom cards or should I just just my Sapphire from here on out

Use the freedom for the 5% categories. Use the sapphire for everything else

So one Freedom, i typically use for the big things like vacations, etc
One freedom is my everyday spending like bars, food, clothes
which I generally am racking up points on
Should I use my Sapphire for the everyday use spending or all spending and keep the freedom cards for emergencies?

Sapphire: For Travel + Restaurants (gives 2x points on these cats)
Freedom: 5x categories. This changes quarterly and you have to sign up for this every quarter. Currently it is Gas Stations.
For all other categories it doesn't matter which one you use as far as points go. Since you have the Sapphire, you can easily transfer points out of freedom into sapphire which gives you access to travel partners.

honestly i just would redeem the points at the end of the year

The only reason to have both of those cards is to use the Freedom for quarterly bonus categories and then transfer the points from the Freedom to your UR account that comes with the Sapphire.
Last quarter was 10x at Amazon - I got 17,000 points from buying a tankless water heater and some office supplies.

I loved that bonus they did. I just went ahead and maxed out the 1,500 on both my wife and myself by buying up our Amazon gift card balance.
So we're pretty much set for the year there
