Best Interest-Only HELOCs?

We recently purchased a new house. With a significant bit of equity, I would prefer to have the funds available through a HELOC to provide additional liquidity. The nice part about a HELOC is that you only pay interest charges when you have an outstanding balance unlike a home equity loan where you borrow a big chunk at once and then make fixed payments.
The house we just sold had an interest-only HELOC through Wells Fargo, which was great. However, it seems that interest-only HELOCs are tougher to find these days. Any recommendations?
