My old car is dying and it won't last another winter up here in Ohio. In getting the best deal should I buy now when the 2016's are on sale or wait until thanksgiving weekend? I'm interested in the cruze/civic/veloster, etc

Doesn't hurt to try now. Go someplace with the Will Cover Method and be prepared to walk away if they do not meet your price. If they don't call you back (they usually do), start shopping again in November.

Or for a better deal, go into a place and do the Will Cover method, get their best price, then still walk out. Then find several other dealers in or out of state who have the same vehicle, and deal with them online, playing them against each other. Then watch how much lower your "Will Cover" price drops. Never deal with only one dealership. Never.

ETA: You may get a better deal on any individual car later in the year (i.e., November), but the selection will be diminished. This can possibly decrease your leverage in dealing with multiple dealers unless you're a little flexible on color, options, etc.
