When do the cops go after the Shady's employees for giving a false statement to police?

They gave their own account of the fight, maybe they weren't lying. Maybe after his kicks JJ was standing off on his own or something? One of the clearly stated they're not saying JJ did or didn't do anything.

This is probably why they have only talked to the media and not the police.

How can the cops go after them if they won't even take the time to take their statements?

Te shades employees didn't say JJ was never in the fight. Go read their quotes again.

Probably about the same time they go after Lowery for giving a false statement to the police.
