If there is a talent gap, it's not much of one. I'd say it's just two different styles.

I like LF7, but LSU didnt need to hand him the ball 30 carries a game and give Guice 3-4.

Is Guice really only 212 lbs (per ESPN)? The way he runs I assumed he'd be more in the 225 range (no pun intended).

Guice is also ranked #41 in total rushing yds, which is impressive given he's only had 4 games as the featured back.

Imagine Etling lining up under center, with LF7 and G5 behind him. Then he steps back into the shotgun and those two split out wide.

Guice made it to 1000 career yards last game. He has to be at the top in LSU history in terms of fewest number of carries to get to 1k.

1000 yards on only 113 carries. 8.85 per carry.

Cecil Collins 1997:

Never thought I would see that again until now. LF is a powerful one cut and accelerate runner with HR potential, speed and strength. NFL type back. Guice is more of a cutback stop and start runner with powerful legs and tremendous balance. I don't think his style translates to the NFL quite as well, but you could argue that it's more exciting for the college game, similar in a way to Reggie Bush, but with more tackle breaking ability. He's like a pinball out there, how he bounces off of tacklers, stops and starts, and changes direction on a dime.
