Do they have any high quarterbacks that take the snap from under center anymore?

Every top prospect they show takes the snap from the shotgun.

Wrong way to poise this question.
Yes many high schools still take the snap from under center. But a lot of schools have gone to spread looks out of the gun.
NFL teams have begun to see this trend that you have QBs that have not taken a snap under center in 7-8 years.
Do college teams look for HS players that run there system already of course, but still very few programs play freshmen, yes most kids get a chance to learn the system for a year or two, to where being under center or in the gun does not matter as much.

Yes, but they pretty much all run some form of the option.

Most of these spread offenses operate out of the pistol. The shotgun is saved for no back, passing situations. The pistol allows offenses to still run dives & traps while you can't out of the shotgun.

Believe it or not Brandon Harris took about 1/3 of his snaps under center at Parkway.

That's good to know. This means he's a step ahead of some of these other QB's who strictly operate out of the pistol or shotgun.

Mett usually looked high during games. Other than that, Gibson looked high during his OV to LSU.
