Anyone have any recommendations? My dad loves these games and I want to get him a joystick and game for this birthday.

This makes me wish they still made badass Ace Combat games.

I use to love the Rogue Squadron Franchise...closest to that would be Battle Front which comes out in November and looks Bada$$...
As far as military flight OP games...no idea.

acecombat was the SHIZZZ.. I would love to see those come back, maybe even a rogue squadron in the style of Acecombat

Not a good simulator but I do miss old Super Nintendo/arcade fighter games like Darius Twin.
Something about fast paced gameplay/ constant weapon upgrades/ and rapid rates of fire make for a great game.

World of Planes looks about as realistic as it gets. I've never played it but the videos make it look worthwhile if you're into that sort of thing

War Thunder. You get to play with tanks too.

There's a game called AirBrawl that's free to play...and that's all it is. Dogfighting.

Does he want to just fly around or is he an aviator who likes as real as it gets (pre-flight run-up's etc)? Does he want combat or commercial flying? I have many recommendations for any of these scenarios

Dogfighting, specifically WWII but really anything combat related.

Get him to try war thunder. I dont know how it'll work with a joystick, but its an arcade or simulation dogfight multiplayer game. Its a lot of fun.

Crimson Skies was always my favorite.

War thunder is a good choice for WW2.
If he REALLY wants to dive into ultra realstic flight sim with more modern jets the DCS World series is insanely complicated although insanely realistic.
X-Plane 10 is very realistic, and is somewhat of a sandbox. no combat.
WWII has not had a lot of recent sims. War thunder and World of Warplanes have their pro's and con's. They are not campaign, single player based, but are basically matches against another team. Very fun, but there is some inbalance as they allow for mouse control. It may sound like having a joystick would be an advantage overr someone playing with a mouse and keyboard but unfortunatly it is a hinderance. It is part of why I can't play it much as it gets frustrating. It does have a ton of WW2 aircraft which is great.
World of Warplanes and War Thunder are both free to play (they get money from people wanting to ramp up their XP gains which is how you unlock new planes) so you should give these a shot any which way. Do some research on those others.

It's good, but 4 is the GOAT followed by 5 and Zero

Agreed! I spent a lot of times trying to knock down the yellow fighters
