Never played a Dark Souls game before. What am I in for?
Looking forward to an easy relaxing game with a slow learning curve and lots of save points. Did I pick the right game?

I just did the same with DS2: Scholar of the First Sin. I've played 10-15 hours.
Just take it slowly, don't worry about dying and you'll be alright. Once I finish DS2 I'll definitely pick up DS3. The games take me back to NES and Genesis. Nothing that hasn't been said before, of course.

it takes some of the stupidest things FROM has done, and amps it up, I'm shaking my head right now on the stupidity of getting my Plat trophy

Easy plat for me
eh, it's not necessarily going to be "hard" - the dual-fights are annoying me right now.
but like the "killing with a mask" trophy was stupid, the "bathe in all hot springs" trophy was idiotic, but most importantly... the twilight missions, I've been stuck with 2 twilight missions left for 6 days now - because the dumb things wont freakin load as my daily mission!!
and don't even get me started on the wombo combo of "A Meeting on the Other Shore" that would make smough and ornstein cream their shorts
ETA: also... one thing I forgot to mention - they have nerfed the game 3 times since you plat'd it, they expect you to beat the dual-fights AFTER you've been going through NG+ now... (which I just want to move on to other game arleady!!!)

This game is awesome. I am almost finished it and I am trying to squeeze every minute I can out of my first play through. I wish I could wipe my memory of every level and play it again.

Meh, it was by far the toughest fight in the game, but didn't come close to Ornstein and Smough for me
The worst part of the plat by a long shot was mashing X for an hour to get the 60 blacksmith favors

wait. So they are not available after beating NG now?
Don't see anything about this in any of the patch notes.

no, they have just made normal attacks so minimal if you are using one of the conventional weapons (I use sword and dual swords) and have made living weapons ridiculously weak, and a few other things - that trying to beat "A Meeting on the Other Shore" is stupid. For instance, I had a 15 minute fight with them yesterday, had Oda down to 70% health - that's it, 70%, and Yuki hit me with her thrown sword move - it locked me in place just long enough for Oda to hit me once with his sword, and I died.
With that kind of fight, it's just stupid. By 5 minutes I have the Nameless King down to 50% health in his second form - and I can't get blindsided by a 2nd attacker on the field. It's retarded.
So what is the answer? I need more green gear... then I would actually do more damage, and not take as much damage - the stupid asinine thing is, I don't want to, I also don't want to level up, it's dumb, these fights are a part of the first play through, and I just do NOT want to play into that mindset.
ETA: and this is coming from someone who beat the Nameless King on his first play through at level 65 on a no-shield run with a KATANA, a frickING KATANA!! It's infuriating

This game is so much fricking fun. Yall could've warned me it would be like a crack addiction.
I'm only on the first boss guy. Just pulled the sword out of him and got him to about half health before he killed me.
Any thoughts on the best class?
I'm using a mercenary right now because dual wielding always appealed to me.

The LW nerf isn't a big deal since I never used it, but I did spend about 25min on the fight when I won. Kite Oda around and when he buffs, headshot him with an arrow. Run up, do the finisher move, get a few more licks in, then repeat. Once he's down the ice bitch is a joke. Just takes a while. I was tremendously underleveled when I did that fight

Class doesn't really matter, you can mold characters however you like. Stay away from dual wielding, it kinda sucks. I usually do a jack of all trades character with a longsword on my first playthroughs.

Big shields with high stability will really ease the difficulty, esp on some bosses. Wouldnt worry about class, esp not until you know how you wanna play. Plus you can respec down the road.
Didnt use a greatshield much early on, then almost felt unstoppable after using one midway through.
Just find a style you like, find a weapon thats your "go to," and level accordingly. Maybe stay away from sorceries and magic.

Go all in on strength and get a huge arse sword. The game becomes pretty easy
