I've heard good things about MGS V. I've never played a MGS game. Would the story go completely over my head?

Yeah, but you could just watch a story re-cap on youtube and get the gist of it. It has the least story in the whole franchise, which fans hate, but the gameplay is so satisfying that it becomes somewhat irrelevant. It's my second favorite of the franchise.
