In relation to this thread, I saw Final Fantasy Distant Worlds in Nola 2 weeks ago and it was great. If you have a chance to see it I'd recommend.

It's not quite from the final boss fight, but Rivers in the Desert from Persona 5 is so fricking good. But it's the theme for the 2nd to last dungeon and some of the secret boss fights.
For actual final boss themes, I'd probably have to go with the classic Pokemon Trainer Red theme from G/S/C

Ocarina of time. The organ music throughout the castle getting louder and louder as you climb the tower followed by the reveal of Ganon playing the music was just awesome as a 10 year old.
