I honestly thought EVERYONE did this.
Never heard of it until this thread. What is the reason? I always add lemon juice, but I have no idea why

A friend showed me this. Makes them crazy spicy. The little pepper rings all but disolve. I never knew they were there, just that the crawfish were fire.

my buddies Pops, down the bayou throws habanero peppers in his crab boils. leave a nice heat in them.

Water, seasoning , crawfish.... keep it simple this shite isn't rocket science. Pretty much anything added is a waste it doesn't do anything.

My step-brother throws a stick of butter in the pot.

I have a hard time believing a stick of butter makes a difference in 40 or so quarts of water
I have heard that you should add some kind of fat, even a small amount, because some of the seasonings are fat soluble and NOT water soluble.

By the same reasoning, if you want a citrus flavor, adding the whole fruit is better than just juice because of the essential oils in the peel.

Some people say that butter makes peeling them easier, but I think that's bogus.

I agree, I stick to the basics and about as wild as I get is can corn and hot dogs.

Ive tried different seasonings and adding different things, but now I just stick to the basics.

I do enjoy going to the crawfish cookoffs and trying other peoples recipes, but its hard for me to stray from my tried and true method.

Potatoes, lemons, garlic, onions, mushrooms, cajunland seasoning, and crawfish. Maybe a little bit of lemon oil if I remember. That's it. Hot dogs thrown in at the end to have something to snack on while the crawfish soak. Canned corn for the kids who can't eat corn on the cob.

Been to one where the guy didn't know what he was doing. Didn't let fully come to a boil
I cut the fire the second the crawfish hit the water, and eat after soaking for 30 minutes. Never even close to being undercooked.....

Have a good amount of quality beer available. That's what the ice chest is for. And invite me over.

I bring to a boil if I use ice. If I don't use ice, I cut it off before it boils.
