Why don't we eat more goat in America

Goat is eaten by more than 70% of the world's population, comprising 6% of red meat consumption worldwide. Anything to add to the WIKI?

Had some fresh charcoal grilled goat last night at a supper. Cooked it rare. Seasoned really well. No BBQ sauce. I'd match it with a beef steak. The cuts were thick and really good.

I've had two or three different people tell me a Goat dish was one of the best meals they've ever had. I'd say it's happening.

We have plenty of substitutes.
I personally enjoy goat meat. Maurepas Foods in the Bywater has one of the best tacos in town called the crispy goat taco.
While goat is not nearly as popular as beef or chicken here, it's available. I don't believe it's anything like horse, which is clearly a taboo here.

I had curry goat in Jamaica and it was phenomenal... I don't think my grandparents neighbors would like if one of their pigmys turned up missing though.

I eat goat at Indian restaurants. That's about it but that's probably because I don't find it offered anywhere else.

Americans have a mindset that views goat to be beneath them in terms of eating them. Goat and lamb SHOULD BE in every meat department daily, not in the display case for certain cases.

I grab a leg of lamb roast once every other month or so.
