I have eaten at the Galley a few times but I hardly ever order crawfish from restaurants.
They could be getting their supply from someone that gets their crawfish from more west la. I know I have gotten sacks from about 4 or 5 different places uptown and all were crap. After that I started bringing my own crawfish when one of my friends calls me to do a boil for them.
BTW IM not sure how you are telling how clean they are by getting them in a restaurant to begin with..
