Are you getting them yourself? What do you find different from any other spillway crawfish?

To me it matters more what time of year. I generally prefer pond crawfish though.

No, I wish...I just had them at a friend's house this weekend, and they were great. Every year my laffy family brings them to our crawfish boil....


It really could be more of a time of year thing....I just always enjoy them...

I really think you are just used to the normal New Orleans supply. I know I have said this before but its true.

For whatever reason NOLA gets the dirtiest crawfish. I cannot stand the crawfish I get from NOLA suppliers.

When I get pond crawfish or spillway crawfish outside of NO they are a whole lot cleaner. Im not sure where the supply to NO is coming from but I think you are just seeing what those of us west of there are getting on a routine basis.

BTW the time of year thing involves more about the shell thickness.. As the season goes on Im more inclined to find pond crawfish than spillway crawfish since their shells will start to get harder to peel.

Cleanest crawfish I have ever had were the Galley and The Crab Trap...both of their suppliers are out of NOLA....FWIW.

I have eaten at the Galley a few times but I hardly ever order crawfish from restaurants.

They could be getting their supply from someone that gets their crawfish from more west la. I know I have gotten sacks from about 4 or 5 different places uptown and all were crap. After that I started bringing my own crawfish when one of my friends calls me to do a boil for them.

BTW IM not sure how you are telling how clean they are by getting them in a restaurant to begin with..

Ask him where he is getting his crawfish from how the area supply works etc.. Are they getting it shipping in from spillway,pond farmers from west la or more locally. Ask him if he knows where the local seafood places are getting their supply. He could also be getting a better supply than what is available to the consumer as well.

She has mentioned that they are NOLA area crawfish....

They have great suppliers...their shrimp are only wild caught tiger shrimp from LA.

The constant water movement (even in the side bayous) help bring fresh food/ water constantly. This helps growth and hence, taste.

If the basin would have this water movement every year they would be just as good

my family has had a camp on Belle River since the early 70s. I cant imagine a better setting for a crawfish boil. We get them straight from the fishermen, boil and eat them on the pier, and throw the heads back in the river.

I really didnt know LA had tiger shrimp I only thought we had Gulf Brown, White and Pink.

I thought all those tiger shrimp were from asia.
