Google Emeril's recipe that uses the stuffed heads. It is excellent.

I run the stuffing veggies and meat through my grinder. Gives a good texture. Also, get some disposable pastry bags for the stuffing process. It's fast and easy that way.

I don't know if anyone sells them. Most folks use them from a boil. Maybe someone else knows if any places sell cleaned heads.

Capital City Crawfish, Mathernes on Highland, etc. have cleaned heads.
But they're like $12. You're better off buying a few lbs of boiled crawfish and using those tails and those heads.
