What's your "Go-To" dish?

When you absolutely have to nail a dish, what do you make... and if you'd like to share a recipe, that'd be cool too.

Fried Fish
Pork Roast
White Beans
Chicken/Shrimp/Beef Stew
Boiled Crabs/Crawfish/Shrimp
Garlic butter shrimp pasta

Very rarely screw any of those up.

Ribs, Baby Back Ribs, Brisket. I use the green egg with the Digi-Q. Easy peasy.

Chicken and sausage gumbo

My dad taught me to make both and I've been making them as long as I've known how to cook.

If it's not one of those I'd have to go with steaks on the big green egg.

Paneed Eggplant Medallions with a crawfish cream sauce, over angel hair.

Other solid dishes of mine that are often requested:

Cuban Mojo Pork or Chicken with Arroz Congri (black beans and rice)
Pastalaya
Creole Jambalaya
Gumbo (any kind)
Fried Catfish
Etouffee
Smoked Chicken
Smoked Ribs
Eggplant Parm
Shrimp Fettucine
Chicken and Sausage Sauce Piquante
Smothered Turkey Necks or Turkey Wings
Braised Kale

Boiled Seafood

During the Holidays:

Fried Turkey
Oyster Dressing
Mirliton Dressing
Dirty Rice
