Just today I noticed 2 in Metairie. Both used to be poboy joints but are now a higher level Italian place.

Drago's use to struggle quite a bit. Took while for them to get to where they are today

There's also the places that started as neighborhood mini-groceries that became more. 2 that come to mind are Shortstop and Guillory's.

I've only been visiting Fausto's for about five years now. How long ago were they a poboy place?

Faustos in Kinder?
I'm not sure the exact time frame for the transition from a poboy shop, but I've been going there at least 40 years.
