What's your best pimento cheese recipe?

I just eyeball the measurements and use cheddar, pimentos, mayo, pepper, and a little hot sauce. You could add jalapeños, bacon, peppers etc.

I don't have a recipe but the ole lady makes a pretty good one. Fresh grated sharp cheddar, pimentos and mayo for sure. Have to find out the rest. I like jalapeños in it too.

Never made it because no one in my family eats it. Sounds easy as hell. I really enjoy the jalapeño and smoked Gouda pimento cheeses from WF.

I always cut a sweet onion in half then rice it across a fine grater a couple times.

Cheddar,cream cheese, mayo, tsp dijon, s&p, chopped pimentos, bacon, jalapenos... depending on how wet I want it that day is how heavy I go on the mayo.

My PC got lots better when I switched from those tiny jars of chopped pimentos to the jarred, roasted red bell peppers (sold as whole peppers and sliced peppers by Mezzetti's brand IIRC). Way more flavor & color.

I use a store bought brand called Palmetto . I like making grilled cheese sandwiches with the jalapeno version on sprouted grain bread. Smear a little butter on each slice and throw on the gas grill by the pool with a cold IPA.

It's too sweet for my taste

I like 2:1 cheddar to jack, Dukes, woosh, s&p, jar of pimentos and a hit of cayenne hot sauce . Needs to be loose enough to not break a club cracker when dipped into the mixing bowl

Whatever recipe you use, the trick is to roast your own pimentos/red peppers.

I also add a little bit of honey to mine.

Put the pimento from the larger glass jar you get at wal mart and a can of rotel in a colander. Drain well. I use a table spoon of wosrtrshire sauce and a fourth a teaspoon of cayenne pepper. I use extra sharp cheese. You need to grate the cheese by hand because it makes a difference from the shredded you get at the store. 1# of cheese.
