Sure you can! I had a dozen last night. Only problem was my girlfriend said only 10 out of the 12 worked. Still enjoyed though.

I was under the impression that the oysters could also be moved to more ideal salinity depending on conditions. Is that true?

Enjoy them when you wish, the seasons guidelines are true to form. The oysters are the fattest and briniest in the winter months.

You can make a king cake any time of the year, but they are best best before Lent, they just are. From football to crawfish, obey the seasons and enjoy the anticipation.

As far as bacteria and the like, it's all about the water temperature over the bed. If it's higher than 85 degrees you have a higher likelyhood of bacteria growth.
